Ingredients:
1 Cup Flour
1 Tin sweet corn
1 Tin corn in Brine (drained)
1 egg
1 Cup grated cheese
pinch of salt

* you can add thyme to make it more savory it is totally up to you to play with it to make it more sweet or savory.

Method:
add all ingredients together into a bowl and mix.
heat up a pan of oil to shallow fry the fritters.
to test to see if the oil is hot enough, place the end of a wooden spoon in to see if bubbles form at the base and travel towards the surface.
once the oil is ready, use a tablespoon to spoon four dollops of mixture into the hot oil.
fry until golden brown and place on a cooling rack or on paper towel.
Serve immediately with more cheese, syrup or honey. Or with poached eggs and avo or spinach for a savory brunch.
