INGREDIENTS

‘* 500g Boston But or Beef Shin (Optional)

500g Speckled Beans

500g Butter Beans

2 Onions Peeled And Grated

4-5 Medium Carrots Peeled And Grated

3 Potatoes Peeled And Grated

Optional 500g Soup Bones/500g Boston Butt

4 Bay Leaves

2 Tablespoons Parsley

2 Tablespoons Oregano

2 Tablespoons Smoked Paprika

4 Cloves Fresh Garlic Grated

Chicken Stock (enough to fill the Slow Cooker)

Salt And Pepper To Taste

 

METHOD

Soak Beans Overnight (Place beans in bowl and fill bowl with water.  Rinse over colander)

Put Beans Into Slow Cooker

Add Grated Vegetables + Garlic

‘* Add meat (Optional)

Add Fresh Bouquet Garni of Rosemary And Thyme

Add  Oregano, Parsley, Paprika

Add Stock

Mix Throughly and Carefully not to spill

Turn To High And Cook For 6-8 Hours

Add Additional Salt And Pepper To Taste
